Description

This classic meatloaf dinner is the ultimate comfort meal, served with creamy mashed potatoes, rich homemade gravy, and tender green beans and carrots. Perfect for a cozy family dinner.


Ingredients

  • Meatloaf:
  • 1 lb (450 g) ground beef
  • 1/2 cup breadcrumbs
  • 1/4 cup milk
  • 1 small onion, finely chopped
  • 1 egg
  • 2 tbsp ketchup (plus extra for topping)
  • 1 tsp Worcestershire sauce
  • 1/2 tsp garlic powder
  • Salt and pepper to taste
  • Mashed Potatoes:
  • 2 large potatoes, peeled and cubed
  • 2 tbsp butter
  • 1/4 cup milk
  • Salt and pepper to taste
  • Gravy:
  • 2 tbsp pan drippings or butter
  • 2 tbsp all-purpose flour
  • 1 cup beef broth
  • Salt and pepper to taste
  • Vegetables:
  • 1 cup green beans, trimmed
  • 1 cup carrots, sliced
  • 1 tsp olive oil
  • Salt and pepper to taste


Instructions

  1. Preheat oven to 375°F (190°C). Mix ground beef, breadcrumbs, milk, onion, egg, ketchup, Worcestershire sauce, garlic powder, salt, and pepper. Shape into a loaf, top with ketchup, and bake for 45–50 minutes.
  2. Boil potatoes in salted water until tender, about 15 minutes. Drain and mash with butter, milk, salt, and pepper.
  3. Toss green beans and carrots with olive oil, salt, and pepper. Steam or roast for 8–10 minutes until tender.
  4. Heat drippings or butter in a saucepan. Stir in flour and cook 1 minute. Gradually whisk in beef broth until thickened. Season to taste.
  5. Slice meatloaf and serve with mashed potatoes, gravy, green beans, and carrots.

Notes

  • You can substitute ground turkey for a lighter meatloaf.
