Cinnamon Sugar French Toast Muffins are delightful, fluffy muffins coated in a cinnamon-sugar mixture, perfect for breakfast or a snack.
Ingredients
- 2 cups all-purpose flour
- 1/2 teaspoon baking powder
- 1/2 teaspoon baking soda
- 1/4 teaspoon salt
- 1/2 cup granulated sugar
- 1/2 cup unsalted butter, melted
- 2 large eggs
- 1 cup milk
- 1 teaspoon vanilla extract
- 1/4 cup granulated sugar (for coating)
- 1 teaspoon ground cinnamon (for coating)
- 2 tablespoons unsalted butter, melted (for coating)
Instructions
- Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
- Whisk together flour, baking powder, baking soda, salt, and sugar in a medium bowl.
- In a separate bowl, whisk melted butter, eggs, milk, and vanilla extract until smooth.
- Gradually fold wet ingredients into dry ingredients, stirring just until incorporated.
- Spoon batter evenly into muffin tin, filling each cup about two-thirds full.
- Bake 18–20 minutes until tops are golden and a toothpick comes out clean.
- Combine sugar and cinnamon for coating. Allow muffins to cool 5 minutes.
- Brush muffin tops with melted butter and dip into cinnamon-sugar mixture to coat.
- Serve warm, optionally with maple syrup.
Notes
- Do not overmix batter for fluffier muffins.
- Store in airtight container for up to 3 days.
- Can be frozen; reheat in oven before serving.
