Description

Cinnamon Sugar French Toast Muffins are delightful, fluffy muffins coated in a cinnamon-sugar mixture, perfect for breakfast or a snack.


Ingredients

  • 2 cups all-purpose flour
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1/2 cup granulated sugar
  • 1/2 cup unsalted butter, melted
  • 2 large eggs
  • 1 cup milk
  • 1 teaspoon vanilla extract
  • 1/4 cup granulated sugar (for coating)
  • 1 teaspoon ground cinnamon (for coating)
  • 2 tablespoons unsalted butter, melted (for coating)


Instructions

  1. Preheat oven to 350°F (175°C) and grease a 12-cup muffin tin.
  2. Whisk together flour, baking powder, baking soda, salt, and sugar in a medium bowl.
  3. In a separate bowl, whisk melted butter, eggs, milk, and vanilla extract until smooth.
  4. Gradually fold wet ingredients into dry ingredients, stirring just until incorporated.
  5. Spoon batter evenly into muffin tin, filling each cup about two-thirds full.
  6. Bake 18–20 minutes until tops are golden and a toothpick comes out clean.
  7. Combine sugar and cinnamon for coating. Allow muffins to cool 5 minutes.
  8. Brush muffin tops with melted butter and dip into cinnamon-sugar mixture to coat.
  9. Serve warm, optionally with maple syrup.

Notes

  • Do not overmix batter for fluffier muffins.
  • Store in airtight container for up to 3 days.
