Ingredients
- For Pancake Batter:
- 1 cup flour (gluten-free blend optional)
- 2 tsp baking powder
- 1/4 tsp salt
- 1 cup milk (any type)
- 1 large egg
- 2 tbsp vegetable oil (or melted butter)
- For Cinnamon Filling:
- 2 tbsp melted butter
- 1/4 cup brown sugar
- 1 tbsp ground cinnamon
- For Cream Cheese Glaze:
- 4 oz cream cheese (or mascarpone)
- 1 cup powdered sugar
- 1 tsp vanilla extract
- 2 tbsp melted butter
Instructions
- Prepare cinnamon filling by mixing melted butter, brown sugar, and cinnamon. Transfer to a ziplock bag and let thicken 10–15 minutes.
- Make pancake batter by whisking flour, baking powder, and salt. Add milk, oil, and beaten egg; stir until just combined.
- Make glaze by microwaving cream cheese and butter until warm, then whisk in powdered sugar and vanilla extract until smooth.
- Cook pancakes on a preheated skillet. Pour ½ cup batter and pipe cinnamon filling in a swirl. Flip when bubbles form.
- Stack pancakes and drizzle with cream cheese glaze. Optionally top with powdered sugar or nuts.
