Ingredients

    • 4 oz cream cheese (or mascarpone)
    • 1 cup powdered sugar
    • 1 tsp vanilla extract
    • 2 tbsp melted butter


Instructions

  1. Prepare cinnamon filling by mixing melted butter, brown sugar, and cinnamon. Transfer to a ziplock bag and let thicken 10–15 minutes.
  2. Make pancake batter by whisking flour, baking powder, and salt. Add milk, oil, and beaten egg; stir until just combined.
  3. Make glaze by microwaving cream cheese and butter until warm, then whisk in powdered sugar and vanilla extract until smooth.
  4. Cook pancakes on a preheated skillet. Pour ½ cup batter and pipe cinnamon filling in a swirl. Flip when bubbles form.
  5. Stack pancakes and drizzle with cream cheese glaze. Optionally top with powdered sugar or nuts.
