Deliciously fluffy muffins swirled with creamy peanut butter and rich chocolate, perfect for breakfast or a snack.
Ingredients
- 1 3/4 cups all-purpose flour
- 1/2 cup granulated sugar
- 1/4 cup unsweetened cocoa powder
- 2 teaspoons baking powder
- 1/2 teaspoon salt
- 3/4 cup buttermilk (or milk with 1 tablespoon vinegar or lemon juice)
- 1/2 cup vegetable oil or melted butter
- 2 large eggs
- 1 teaspoon vanilla extract
- 1/3 cup creamy peanut butter
- 1/2 cup chocolate chips (optional)
Instructions
- Preheat oven to 375°F (190°C) and line a muffin tin with paper liners.
- Whisk flour, sugar, cocoa powder, baking powder, and salt in a bowl.
- In another bowl, whisk buttermilk, oil or butter, eggs, and vanilla.
- Combine wet and dry ingredients until just mixed. Fold in chocolate chips if using.
- Fill muffin cups halfway with batter. Add dollops of peanut butter and swirl gently.
- Bake 18–20 minutes, until a toothpick comes out clean.
- Cool briefly in pan, then transfer to a wire rack.
Notes
- Do not overmix to keep muffins light and fluffy.
- Adjust peanut butter amount for stronger or lighter flavor.
- Melted butter gives a richer taste than oil.
