Description
Tender chicken strips in a zesty garlic-lemon butter sauce served over creamy garlic Parmesan rice. A quick and flavorful dinner ready in under 40 minutes.
Ingredients
For the Chicken Scampi
- 1½ lbs boneless, skinless chicken breasts, cut into strips
- 2 tablespoons olive oil
- 3 tablespoons butter
- 4 cloves garlic, minced
- ½ teaspoon red pepper flakes (optional)
- Zest of 1 lemon
- Juice of 1 lemon
- ½ teaspoon Italian seasoning
- Salt and black pepper, to taste
- Fresh parsley, chopped (for garnish)
For the Creamy Garlic Parmesan Rice
- 1 cup long-grain white rice
- 2 cups chicken broth
- 1 tablespoon butter
- 3 cloves garlic, minced
- ½ cup heavy cream
- ½ cup grated Parmesan cheese
- Salt and black pepper, to taste
Instructions
- Melt butter in a saucepan over medium heat. Add garlic and sauté 30 seconds.
- Stir in rice and chicken broth. Bring to a boil, reduce heat, cover, and simmer 15–18 minutes until tender.
- Stir in heavy cream and Parmesan. Season with salt and pepper. Keep warm.
- Season chicken with salt, pepper, and Italian seasoning.
- Heat olive oil in a large skillet over medium-high heat. Cook chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
- Melt butter in the skillet. Add garlic and red pepper flakes; sauté until fragrant.
- Stir in lemon zest and juice, scraping up browned bits.
- Return chicken to the skillet and toss to coat in the lemon-garlic butter sauce. Simmer 2 minutes.
- Spoon creamy Parmesan rice onto plates and top with chicken scampi. Garnish with parsley and extra Parmesan.

- Optional: Add more lemon juice for extra brightness.
- Keep rice covered and warm while cooking chicken to maintain creaminess.
