Description

Tender chicken strips in a zesty garlic-lemon butter sauce served over creamy garlic Parmesan rice. A quick and flavorful dinner ready in under 40 minutes.


Ingredients

For the Chicken Scampi

  • lbs boneless, skinless chicken breasts, cut into strips
  • 2 tablespoons olive oil
  • 3 tablespoons butter
  • 4 cloves garlic, minced
  • ½ teaspoon red pepper flakes (optional)
  • Zest of 1 lemon
  • Juice of 1 lemon
  • ½ teaspoon Italian seasoning
  • Salt and black pepper, to taste
  • Fresh parsley, chopped (for garnish)

For the Creamy Garlic Parmesan Rice

  • 1 cup long-grain white rice
  • 2 cups chicken broth
  • 1 tablespoon butter
  • 3 cloves garlic, minced
  • ½ cup heavy cream
  • ½ cup grated Parmesan cheese
  • Salt and black pepper, to taste


Instructions

  1. Melt butter in a saucepan over medium heat. Add garlic and sauté 30 seconds.
  2. Stir in rice and chicken broth. Bring to a boil, reduce heat, cover, and simmer 15–18 minutes until tender.
  3. Stir in heavy cream and Parmesan. Season with salt and pepper. Keep warm.
  4. Season chicken with salt, pepper, and Italian seasoning.
  5. Heat olive oil in a large skillet over medium-high heat. Cook chicken 4–5 minutes per side until golden and cooked through. Remove and set aside.
  6. Melt butter in the skillet. Add garlic and red pepper flakes; sauté until fragrant.
  7. Stir in lemon zest and juice, scraping up browned bits.
  8. Return chicken to the skillet and toss to coat in the lemon-garlic butter sauce. Simmer 2 minutes.
  9. Spoon creamy Parmesan rice onto plates and top with chicken scampi. Garnish with parsley and extra Parmesan.
