Description

This Chicken Caesar Pasta Salad is tossed with creamy Caesar dressing, tender chicken, crisp romaine, lots of Parmesan, and topped with irresistible garlicky breadcrumbs.


Ingredients

  • 1 lb boneless skinless chicken breasts
  • Fine sea salt and freshly-ground black pepper
  • 1 tbsp olive oil
  • 1 lb uncooked pasta (farfalle)
  • 3 romaine lettuce hearts (about 12 oz), chopped
  • 1 1/2 cups Caesar dressing
  • Parmesan cheese, for topping
  • Garlic Breadcrumbs:
  • 1 tbsp butter
  • 2 cloves garlic, minced
  • 1/2 cup panko breadcrumbs
  • Salt and black pepper, to taste


Instructions

  1. Bring a large pot of generously salted water to a boil.
  2. Melt butter in a sauté pan over medium heat. Add garlic and cook 1 minute.
  3. Add breadcrumbs, salt, and pepper. Sauté 2–3 minutes until golden. Set aside.
  4. Season chicken with salt and pepper. Heat olive oil in pan over medium-high heat.
  5. Cook chicken 4–5 minutes per side until cooked through. Rest 5–10 minutes, then slice.
  6. Cook pasta until al dente. Drain and rinse with cold water until chilled.
  7. Toss pasta, lettuce, chicken, and Caesar dressing in a large bowl.
  8. Serve topped with garlic breadcrumbs, Parmesan, and extra black pepper.

Notes

  • If using homemade Caesar dressing, make a 1.5 batch to yield 1.5 cups.
  • Serve immediately or refrigerate up to 4 hours before serving.
