Description
This Chicken Caesar Pasta Salad is tossed with creamy Caesar dressing, tender chicken, crisp romaine, lots of Parmesan, and topped with irresistible garlicky breadcrumbs.
Ingredients
- 1 lb boneless skinless chicken breasts
- Fine sea salt and freshly-ground black pepper
- 1 tbsp olive oil
- 1 lb uncooked pasta (farfalle)
- 3 romaine lettuce hearts (about 12 oz), chopped
- 1 1/2 cups Caesar dressing
- Parmesan cheese, for topping
- Garlic Breadcrumbs:
- 1 tbsp butter
- 2 cloves garlic, minced
- 1/2 cup panko breadcrumbs
- Salt and black pepper, to taste
Instructions
- Bring a large pot of generously salted water to a boil.
- Melt butter in a sauté pan over medium heat. Add garlic and cook 1 minute.
- Add breadcrumbs, salt, and pepper. Sauté 2–3 minutes until golden. Set aside.
- Season chicken with salt and pepper. Heat olive oil in pan over medium-high heat.
- Cook chicken 4–5 minutes per side until cooked through. Rest 5–10 minutes, then slice.
- Cook pasta until al dente. Drain and rinse with cold water until chilled.
- Toss pasta, lettuce, chicken, and Caesar dressing in a large bowl.
- Serve topped with garlic breadcrumbs, Parmesan, and extra black pepper.
Notes
- If using homemade Caesar dressing, make a 1.5 batch to yield 1.5 cups.
- Serve immediately or refrigerate up to 4 hours before serving.
