Ingredients

    • 1 red bell pepper, sliced
    • 1 green bell pepper, sliced
    • 1 yellow onion, sliced
    • 1 tbsp vegetable oil
    • 1 tsp garlic powder
    • 1 tsp onion powder
    • 1 tbsp fajita seasoning
    • 1/2 tsp smoked paprika
    • Salt & pepper, to taste

 

    • For the Creamy Casserole Base
    • 1 cup sour cream
    • 1/2 cup cream cheese, softened
    • 1/2 cup chicken broth
    • 1 cup shredded cheddar cheese
    • 1 cup shredded Monterey Jack cheese

 

  • For Topping
  • Extra shredded cheese
  • Sliced green onions
  • Fresh cilantro (optional)


Instructions

  1. Preheat Oven: Preheat oven to 375°F (190°C).
  2. Sauté Veggies: In a skillet, heat vegetable oil. Sauté bell peppers and onion until slightly tender. Add garlic powder, onion powder, fajita seasoning, smoked paprika, salt, and pepper. Stir to combine.
  3. Prepare Casserole Base: In a bowl, mix sour cream, cream cheese, chicken broth, cheddar, and Monterey Jack cheese until smooth.
  4. Combine: Mix shredded chicken with sautéed vegetables. Spread into a baking dish. Pour creamy cheese mixture over the top and gently stir to combine.
  5. Add Topping: Sprinkle extra shredded cheese on top.
  6. Bake: Bake uncovered for 20–25 minutes until cheese is melted and bubbly.
