- 1 tbsp fajita seasoning
- 1/2 tsp smoked paprika
- Salt & pepper, to taste

- 1 cup sour cream
- 1/2 cup cream cheese, softened
- 1/2 cup chicken broth
- 1 cup shredded cheddar cheese
- 1 cup shredded Monterey Jack cheese
- For Topping
- Extra shredded cheese
- Sliced green onions
- Fresh cilantro (optional)
Instructions
- Preheat Oven: Preheat oven to 375°F (190°C).
- Sauté Veggies: In a skillet, heat vegetable oil. Sauté bell peppers and onion until slightly tender. Add garlic powder, onion powder, fajita seasoning, smoked paprika, salt, and pepper. Stir to combine.
- Prepare Casserole Base: In a bowl, mix sour cream, cream cheese, chicken broth, cheddar, and Monterey Jack cheese until smooth.
- Combine: Mix shredded chicken with sautéed vegetables. Spread into a baking dish. Pour creamy cheese mixture over the top and gently stir to combine.
- Add Topping: Sprinkle extra shredded cheese on top.
- Bake: Bake uncovered for 20–25 minutes until cheese is melted and bubbly.
- Garnish: Top with sliced green onions and fresh cilantro before serving.
