Description

These Cheesy Baked Mashed Potatoes are creamy, buttery, and loaded with melty Italian cheese. Perfect as a comforting side dish for holidays or weeknight dinners!


Ingredients

  • 5 pounds yellow potatoes (Yukon Gold or russets), peeled and chopped
  • 2 teaspoons salt
  • 10 tablespoons unsalted butter, room temperature, divided
  • 4 ounces cream cheese, room temperature
  • 1 cup milk
  • 2 cups Italian blend shredded cheese
  • 1 tablespoon finely chopped fresh chives (optional)


Instructions

  1. Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
  2. Cook the Potatoes: Place chopped potatoes in a large pot. Cover with cold water, add 2 tsp salt, and bring to a boil. Cook for 15–20 minutes, or until fork-tender. Drain well.
  3. Mash the Potatoes: In a large bowl, mash potatoes with 6 tablespoons of butter, cream cheese, and milk until creamy and smooth. Season with additional salt to taste.
  4. Assemble: Transfer mashed potatoes to the prepared baking dish. Smooth the top and sprinkle the shredded Italian cheese evenly over the potatoes. Dot the remaining 4 tablespoons butter over the top.
  5. Bake: Bake in the preheated oven for 20–25 minutes, or until the cheese is melted and bubbly. For a golden top, broil for 2–3 minutes at the end.
  6. Garnish and Serve: Remove from oven, sprinkle with chopped chives if desired, and serve warm. Enjoy your cheesy, comforting side dish!
