Ingredients
- 5 pounds yellow potatoes (Yukon Gold or russets), peeled and chopped
- 2 teaspoons salt
- 10 tablespoons unsalted butter, room temperature, divided
- 4 ounces cream cheese, room temperature
- 1 cup milk
- 2 cups Italian blend shredded cheese
- 1 tablespoon finely chopped fresh chives (optional)
Instructions
- Preheat Oven: Preheat your oven to 375°F (190°C). Grease a 9×13-inch baking dish and set aside.
- Cook the Potatoes: Place chopped potatoes in a large pot. Cover with cold water, add 2 tsp salt, and bring to a boil. Cook for 15–20 minutes, or until fork-tender. Drain well.
- Mash the Potatoes: In a large bowl, mash potatoes with 6 tablespoons of butter, cream cheese, and milk until creamy and smooth. Season with additional salt to taste.
- Assemble: Transfer mashed potatoes to the prepared baking dish. Smooth the top and sprinkle the shredded Italian cheese evenly over the potatoes. Dot the remaining 4 tablespoons butter over the top.
- Bake: Bake in the preheated oven for 20–25 minutes, or until the cheese is melted and bubbly. For a golden top, broil for 2–3 minutes at the end.
- Garnish and Serve: Remove from oven, sprinkle with chopped chives if desired, and serve warm. Enjoy your cheesy, comforting side dish!
Notes
- Make ahead: Mash potatoes and assemble the dish, then refrigerate overnight. Bake before serving.
- For extra creaminess, add a splash of heavy cream instead of milk.
- Substitute mozzarella or cheddar for the Italian blend if preferred.
