Description

This cheesy apple and sausage breakfast casserole is a savory-sweet crowd-pleaser made with hash browns, sharp cheddar, juicy apples, and breakfast sausage. Perfect for holidays, brunch, or make-ahead breakfasts.


Ingredients

  • 1 tablespoon unsalted butter, at room temperature
  • 5 cups (about 19 ounces) shredded hash browns, thawed
  • 2 cups (8 ounces) shredded sharp cheddar cheese, divided
  • 2 Gala apples, peeled and diced
  • 1/2 teaspoon ground cinnamon
  • 6 large eggs
  • 1 cup milk (whole or 2%)
  • 12 ounces breakfast sausage, casings removed if links
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground black pepper
  • 1/2 teaspoon onion powder


Instructions

  1. Preheat the oven to 375°F (190°C). Butter a 13 x 9-inch baking dish.
  2. Scatter the hash browns evenly over the bottom of the dish and sprinkle with 1/2 cup cheddar cheese.
  3. In a medium bowl, toss the diced apples with cinnamon until evenly coated. Set aside.
  4. In a large bowl, whisk together the eggs and milk until smooth.
  5. Break the sausage into bite-size pieces and add to the egg mixture along with the apples, 1 cup cheddar, salt, pepper, and onion powder. Mix well.
  6. Pour the mixture evenly over the potatoes and cheese. Sprinkle the remaining 1/2 cup cheddar on top.
  7. Bake for 40–50 minutes, or until the cheese is melted and the edges are golden. Let cool for 10 minutes before serving.

Notes

  • If using a ceramic baking dish, baking time may increase to up to 1 hour.
  • Refrigerate leftovers tightly covered for up to 4 days.
