Description

Caramelised Soy Chicken in Garlic Ginger Broth with Rice is a savory delight featuring tender chicken thighs in a fragrant garlic-ginger broth, served over white rice and garnished with green onions and sesame seeds.


Ingredients

  • 2 tbsp soy sauce
  • 1 tbsp dark soy sauce
  • 1 tbsp brown sugar
  • 1 tbsp honey
  • 1 tbsp rice vinegar
  • 4 boneless chicken thighs
  • 4 garlic cloves, minced
  • 1 tbsp fresh ginger, grated
  • 2 cups chicken broth
  • 1 tsp sesame oil
  • 2 tbsp vegetable oil
  • 2 cups cooked white rice
  • Chopped green onions (for garnish)
  • Sesame seeds (for garnish)


Instructions

  1. Mix soy sauce, dark soy sauce, brown sugar, honey, and rice vinegar to create marinade. Marinate chicken thighs for at least 20 minutes.
  2. Heat vegetable oil in a pan over medium-high heat. Sear chicken thighs on both sides until caramelised and cooked through. Remove and set aside.
  3. In the same pan, sauté minced garlic and grated ginger for 1–2 minutes until fragrant.
  4. Add chicken broth and sesame oil. Bring to simmer and reduce slightly.
  5. Slice cooked chicken and return to broth for 2–3 minutes to warm through.
  6. Serve chicken and broth over bowls of cooked white rice. Garnish with chopped green onions and sesame seeds.

  • For a vegetarian version, substitute chicken thighs with tofu or seasonal vegetables.
