Caramelised Soy Chicken in Garlic Ginger Broth with Rice is a savory delight featuring tender chicken thighs in a fragrant garlic-ginger broth, served over white rice and garnished with green onions and sesame seeds.
Ingredients
- 2 tbsp soy sauce
- 1 tbsp dark soy sauce
- 1 tbsp brown sugar
- 1 tbsp honey
- 1 tbsp rice vinegar
- 4 boneless chicken thighs
- 4 garlic cloves, minced
- 1 tbsp fresh ginger, grated
- 2 cups chicken broth
- 1 tsp sesame oil
- 2 tbsp vegetable oil
- 2 cups cooked white rice
- Chopped green onions (for garnish)
- Sesame seeds (for garnish)
Instructions
- Mix soy sauce, dark soy sauce, brown sugar, honey, and rice vinegar to create marinade. Marinate chicken thighs for at least 20 minutes.
- Heat vegetable oil in a pan over medium-high heat. Sear chicken thighs on both sides until caramelised and cooked through. Remove and set aside.
- In the same pan, sauté minced garlic and grated ginger for 1–2 minutes until fragrant.
- Add chicken broth and sesame oil. Bring to simmer and reduce slightly.
- Slice cooked chicken and return to broth for 2–3 minutes to warm through.
- Serve chicken and broth over bowls of cooked white rice. Garnish with chopped green onions and sesame seeds.
Notes
- For a vegetarian version, substitute chicken thighs with tofu or seasonal vegetables.
