Description

This Breakfast Lasagna features layers of eggs, ricotta, mozzarella, breakfast sausage, bell peppers, and spinach — a hearty and delicious morning twist on traditional lasagna.


Ingredients

  • 12 lasagna noodles
  • 8 large eggs
  • 2 cups ricotta cheese
  • 2 cups shredded mozzarella cheese
  • 1 cup cooked and crumbled breakfast sausage
  • 1 cup diced bell peppers
  • 1 cup chopped spinach
  • 1/2 cup grated Parmesan cheese
  • 1 tsp garlic powder
  • 1 tsp onion powder
  • Salt and pepper, to taste


Instructions

  1. Preheat oven to 375°F (190°C).
  2. Cook lasagna noodles according to package instructions; drain and set aside.
  3. In a large bowl, whisk together eggs, ricotta cheese, garlic powder, onion powder, salt, and pepper.
  4. In a greased baking dish, layer 4 lasagna noodles, half of the egg mixture, half of the sausage, half of the bell peppers, and half of the spinach.
  5. Repeat layers, finishing with remaining noodles on top.
  6. Sprinkle mozzarella and Parmesan cheese over top.
  7. Bake for 30–35 minutes until cheese is bubbly and golden.
  8. Cool for a few minutes before slicing and serving.
