Description
This Breakfast Lasagna features layers of eggs, ricotta, mozzarella, breakfast sausage, bell peppers, and spinach — a hearty and delicious morning twist on traditional lasagna.
Ingredients
- 12 lasagna noodles
- 8 large eggs
- 2 cups ricotta cheese
- 2 cups shredded mozzarella cheese
- 1 cup cooked and crumbled breakfast sausage
- 1 cup diced bell peppers
- 1 cup chopped spinach
- 1/2 cup grated Parmesan cheese
- 1 tsp garlic powder
- 1 tsp onion powder
- Salt and pepper, to taste
Instructions
- Preheat oven to 375°F (190°C).
- Cook lasagna noodles according to package instructions; drain and set aside.
- In a large bowl, whisk together eggs, ricotta cheese, garlic powder, onion powder, salt, and pepper.
- In a greased baking dish, layer 4 lasagna noodles, half of the egg mixture, half of the sausage, half of the bell peppers, and half of the spinach.
- Repeat layers, finishing with remaining noodles on top.
- Sprinkle mozzarella and Parmesan cheese over top.
- Bake for 30–35 minutes until cheese is bubbly and golden.
- Cool for a few minutes before slicing and serving.
