Instructions

  1. Heat olive oil in a large pot over medium heat. Sauté the diced onion until soft and translucent.
  2. Add minced garlic and stir for about 1 minute until fragrant.
  3. Add the ground beef to the pot and cook until browned, breaking it apart with a spoon. Drain excess fat if needed.
  4. Stir in the cubed potatoes and sliced carrots. Cook for about 5 minutes to allow the vegetables to start softening.
  5. Pour in the beef broth and bring everything to a boil. Reduce heat and simmer for 20–25 minutes until the potatoes are fork-tender.
