Perfectly baked chicken thighs coated in zesty orange and tart cranberries make for a vibrant and flavorful dish that’s both comforting and festive.
Ingredients
- 8 bone-in, skin-on chicken thighs
- 1 cup fresh cranberries
- 1 cup freshly squeezed orange juice
- Zest of 1 orange
- 1/4 cup honey
- 4 cloves garlic, minced
- 2 tablespoons olive oil
- 1 tablespoon soy sauce
- 1 teaspoon salt
- 1/2 teaspoon black pepper
- 1 teaspoon dried thyme
- Optional: fresh rosemary sprigs for garnish
Instructions
- Preheat oven to 375°F (190°C).
- In a bowl, whisk orange juice, zest, honey, garlic, olive oil, soy sauce, salt, and pepper until combined.
- Arrange chicken thighs in a single layer in a baking dish.
- Pour the orange-honey mixture over the chicken, coating well.
- Scatter cranberries around and over the chicken.
- Sprinkle dried thyme evenly on top.
- Cover with foil and bake for 20 minutes.
- Remove foil and bake for another 20–25 minutes, until chicken reaches 165°F (74°C) and skin is golden.
- Optional: Broil for 2–3 minutes for extra color.
- Remove from oven and rest for a few minutes before serving.
Notes
- Pairs well with rice or crusty bread to soak up the citrus sauce.
- Boneless thighs may be used with adjusted cooking time.
- Store leftovers in an airtight container for up to 3 days.
