Description

Perfectly baked chicken thighs coated in zesty orange and tart cranberries make for a vibrant and flavorful dish that’s both comforting and festive.


Ingredients

  • 8 bone-in, skin-on chicken thighs
  • 1 cup fresh cranberries
  • 1 cup freshly squeezed orange juice
  • Zest of 1 orange
  • 1/4 cup honey
  • 4 cloves garlic, minced
  • 2 tablespoons olive oil
  • 1 tablespoon soy sauce
  • 1 teaspoon salt
  • 1/2 teaspoon black pepper
  • 1 teaspoon dried thyme
  • Optional: fresh rosemary sprigs for garnish


Instructions

  1. Preheat oven to 375°F (190°C).
  2. In a bowl, whisk orange juice, zest, honey, garlic, olive oil, soy sauce, salt, and pepper until combined.
  3. Arrange chicken thighs in a single layer in a baking dish.
  4. Pour the orange-honey mixture over the chicken, coating well.
  5. Scatter cranberries around and over the chicken.
  6. Sprinkle dried thyme evenly on top.
  7. Cover with foil and bake for 20 minutes.
  8. Remove foil and bake for another 20–25 minutes, until chicken reaches 165°F (74°C) and skin is golden.
  9. Optional: Broil for 2–3 minutes for extra color.
  10. Remove from oven and rest for a few minutes before serving.

Notes

  • Pairs well with rice or crusty bread to soak up the citrus sauce.
  • Boneless thighs may be used with adjusted cooking time.
