Description
These baked feta eggs are a savory, Mediterranean-inspired breakfast featuring roasted tomatoes, peppers, and crumbled feta baked into a delicious, protein-packed meal.
Ingredients
- 2 cups cherry or grape tomatoes
- 1 red bell pepper, diced
- ½ small red onion, diced
- 3 cloves minced garlic
- 8 ounces feta cheese
- 4 tablespoons olive oil
- 1 teaspoon dried oregano
- 1 teaspoon sea salt
- ½ teaspoon dried thyme
- ½ teaspoon ground black pepper
- ½ teaspoon red pepper flakes
- 1 cup chopped baby spinach
- 4 large eggs
- Optional topping: chopped fresh basil or chives
Instructions
- Preheat oven to 375°F (190°C).
- In a baking dish, combine tomatoes, bell pepper, red onion, garlic, olive oil, oregano, salt, thyme, black pepper, and red pepper flakes. Toss to coat evenly.
- Bake for 20–25 minutes, or until vegetables are softened and tomatoes begin to burst.
- Stir in chopped spinach and crumble feta evenly over the vegetables.
- Make 4 small wells in the mixture and crack one egg into each.
- Return to oven and bake for 8–12 minutes, depending on desired egg doneness.
- Top with fresh basil or chives if desired and serve warm.
Notes
- For runny yolks, bake closer to 8 minutes after adding eggs.
- Add crusty bread or pita for serving.
